Holiday Recipes from the NuLeaf Family

'Tis the season for holiday cooking and baking. The NuLeaf family is happy to share some of our favorite recipes with you. We hope you have a sweet and savory season, and enjoy every minute with your loved ones!

Crab Dip

1-1/4 c mayo

1 c chopped celery

1 medium onion chopped

1 pkg cream cheese 8 oz

1 can crab

1 can cream of mushroom soup

Melt cream cheese in microwave. Combine remaining ingredients and mix together. Refrigerate and serve with crackers or chips.


Broccoli and Cauliflower Gratin

3/4 c plain yogurt

1-1/4 c shredded cheddar cheese

1/2 c shredded parmesan cheese

1 tsp mustard

1/4 tsp salt + 1/4 tsp pepper

1/8 tsp red pepper flakes

1/2 tsp minced garlic

2 c frozen cauliflower + 2 c frozen broccoli florets

1/4 c breadcrumbs

1/4 tsp paprika

Combine first 7 ingredients together in a bowl. Add broccoli and cauliflower, toss to coat. Pour into a greased casserole dish. Sprinkle with breadcrumbs, then paprika. Bake at 350 for 30 minutes or until golden brown.


Spiced Sweet Potatoes

4 sweet potatoes

1 tsp honey

1/4 tsp ground cumin

1/4 tsp salt

1/8 tsp black pepper

Preheat oven to 350. Wash and dry sweet potatoes and prick with fork. Wrap in foil. Place in oven and bake for one hour or until they easily pierce with a knife. When cooked through, unwrap potatoes and cut in half, scoop out insides. Mash to desired consistency. Add honey, cumin, salt, pepper and serve immediately. 


Stuffed Chicken Breasts

6 boneless skinless chicken breasts (or 3 large breasts split in half)

6 slices swiss cheese

1 lb fresh mushrooms

1 can cream of mushrooms soup

1/2 c dry white wine

2 c herb bread stuffing

8 T melted butter

Place chicken in 9x13 greased pan. Top with cheese. Arrange mushrooms over top. Mix soup and wine and pour over chicken. Sprinkle stuffing on top. (May refrigerate at this point.) Drizzle melted butter over top. Bake 45 minutes at 350. 


Christmas Pretzels

Bag of small, pretzel twists

Hershey's Kisses, unwrapped

Red and green M&Ms

Top each pretzel with a kiss and place in preheated 200 degree oven for 10 minutes. Remove and immediately press an M&M in the top of each Kiss. Let cool completely. 


Popcorn Balls

1 c sugar

1/2 c butter

1/2 c corn syrup

3 pkgs microwave popcorn

Melt butter and stir in other ingredients except popcorn. Bring to boil. Take off stove and cover for 2 minutes. Stir in popcorn and form into balls. Wrap each ball in plastic wrap. Optional: stir in sprinkles or candies to make it festive!
